Just a quick, simple, healthy breakfast.  One egg covers the whole English muffin, and keeps your cholesterol in check.  I use olive oil instead of butter to grease the pan.  You can switch out the lettuce with spinach, for a little extra flavor.  Strawberries and bananas (or whatever seasonal fruit) help to start your day with a recommended fruit serving. Your breakfasts are way fancier than mine. You'll notice I will rarely if ever post a breakfast. Color me impressed.
