Beet and Carrot wrap

As I spent a few hours in the kitchen yesterday, I decided to whip something together for my lunch today. As I was making beet burgers for dinner, I already had some beets grated up...so....tahdah!

Beets, carrots, arugula, a pinch of shredded mozzarella, olive oil wrap, and strawberry balsamic vinegar.
