From a recipe for Banana waffles in
Veganomicon, I made a few minor alterations from the banana nut waffle recipe:
- 1 1/4 cups soy milk
- 1/2 cup water
- 1 1/2 cup canned pumpkin
- 3 tbsp maple syrup
- 1 tsp vanilla extract

2 1/4 cups flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1/4 tsp nutmeg |
Mix altogether in a large bowl, throw on your waffle iron, and get ready for some pumpkin goodness!
mmmmmmmmmmmmmm... Even though my waffle maker hates me, I might have to give this a try over the weekend.
