One of my favorites growing up, this is by far the best tasting and most moist (is that how you say that?) banana bread I have ever had.
Ingredients:
- 1 1/2 C sugar
- 1/2 C margarine
- 3 eggs
- 1 C mashed bananas
- 1 C walnuts
- 1/2 C sour cream
- 2 C flour
- 1 TBSP boiling water
- 1 tsp baking powder
- 1 tsp baking soda
Instructions:
- Separate egg whites into a mixing bowl
- In a separate small bowl, mix boiling water and baking soda
- In a separate large bowl, mix all other ingredients, including egg yolks and baking soda/water mixture
- Whip egg whites until stiff
- Fold egg whites into mixture
- Bake at 350 for 40-50 minutes
