Garlic soup

After a trip to the East coast for the holidays, I realized this would be a good recipe to share. Breathing in the aroma alone can help clear up your sinuses. Serves two.



Ingredients:
  • 2 tbsp olive oil
  • 4 garlic cloves, diced
  • 1 leek, chopped
  • 1 large carrot (or about 6 baby carrots) chopped
  • 4 cups vegetable stock
  • 1 cup water
  • 1 large potato, chopped
  • A few tbsp of parsley


Instructions:
  1. Heat oil in a pot. Add all veggies to soften.
  2. Add stock and water. Bring to a boil, then lower heat to simmer for about 5 minutes.
  3. Sprinkle parsley on top, and enjoy!
