Ingredients:
- 2 tbsp olive oil
- 4 garlic cloves, diced
- 1 leek, chopped
- 1 large carrot (or about 6 baby carrots) chopped
- 4 cups vegetable stock
- 1 cup water
- 1 large potato, chopped
- A few tbsp of parsley
Instructions:
- Heat oil in a pot. Add all veggies to soften.
- Add stock and water. Bring to a boil, then lower heat to simmer for about 5 minutes.
- Sprinkle parsley on top, and enjoy!
