A super easy recipe from
EgglessCooking.com. One of my favorite breakfast treats.
2 cups flour 1/2 tbsp baking soda 1 cup sugar 1 cup milk (I used almond) 1/4 cup applesauce 1 tbsp veggie oil 1 tsp lemon extract 1 tbsp apple cide vinegar 2 cups blueberries |
- In a medium bowl, mix together dry ingredients except for sugar.
- In a large bowl, mix the sugar and wet ingredients.
- Add the dry mix to the wet mix and stir until combined.
- Gently mix in the berries.
- Fill muffin cups 2/3 full
- Bake at 375°F for about 20 minutes, until a toothpick comes out clean. Cool on a wire rack.
