2 cups garbanzo beans
1/4 cup sundried tomatoes, chopped
2 tbsp olive oil
1 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup red onion, diced
2 tbsp parsley
Mix vinegar, oil and garlic. Stir in the rest of the ingredients and marinate at room temp for about 1 hour, or refrigerate overnight.
